The Short Answer

For painted and stained cabinets: mix a small amount of dish soap in warm water. Dampen a microfiber cloth (not dripping wet) and wipe. Dry immediately with a second clean cloth — do not leave water sitting on the surface. For grease buildup: a diluted degreaser (1:10 diluted TSP substitute or dedicated cabinet cleaner) removes cooking oil accumulation near the stove. Avoid: vinegar (etches finish), bleach (discolors), abrasive scrubbers (scratch), and silicone-based polishes (create buildup that attracts more grease).
