Yes. Custom countertops can be made to any depth. Deeper countertops (27-30 inches) are sometimes specified to accommodate deeper appliances or create more work surface. The tradeoff is reaching the back of the counter becomes harder. Countertop depth should match the base cabinet depth plus overhang.

What overhang does a countertop need for seating?

A countertop overhang for bar stool seating needs a minimum of 9 inches for comfortable knee clearance — 12-15 inches is preferred. This applies to kitchen islands and peninsula overhangs. Standard 1-inch overhangs on perimeter countertops are not for seating.
